Killer Quinoa Cakes
A dear friend showed me this recipe and it has become a staple in my kitchen. They are good hot and cold, as a meal or even a snack.

Ingredients
1 cup raw quinoa
1 zucchini, grated
½ cup slivered almonds /chopped hazelnuts
1 cup crumbled feta
½ cup onion, diced
1 cup baby spinach, chopped
6 mushrooms, chopped
6-7 eggs
Seasoning: salt, pepper, chili powder
Directions:
1. Cook quinoa; season water with salt, pepper and chili powder.
2.While quinoa cools, chop up the vegetables.
3. Stir all vegetables, nuts and feta through the quinoa
4. Add 6-7 eggs and form into balls on a baking sheet.
5. Gently press the balls so they are a little flatter.
6. Bake in oven at 350 degrees for 12 minutes, then flip the cakes and bake for another 5-7 minutes.
Serve hot or cold.
